Ginger Veggie Soup

Hey all! I’ve recently been diagnosed with SIBO – Small Intestine Bacteria Overgrowth – which is the cause of my histamine intolerance. A lot of my over all inability to be well is really making sense to me now! At first I was really afraid that I’d have to cut down on my beloved carbs…wah wah waaaah! I was most fearful of losing my precious rice and quinoa! But recently I found out that during my protocol to kill the bacteria, carbs are actually helpful to me! Yay! A million times yay!

I put this recipe together when I thought I might have to cut grains from my diet, so you might consider adding rice or quiona, however it’s pretty incredible all on it’s own! The choice is yours – to grain, or not to grain?

This recipe is both low histamine and gut healthy, which are amazing when it comes to making your skin glow with radiant health! The outside of your body (skin) is the best way to understand what’s going on inside! Pay attention to what your skin is telling you and feed your body lots of nutritious, yummy,¬†goodness like this ginger soup which is full of ingredients high in quercetin!

Amazing, health fortifying ingredients:

  • 1/4 white onion
  • 3 carrots
  • 3 stalks celery
  • 1 granny smith apple
  • 1 pear
  • 1 small head of broccoli
  • 2 – 3 handfuls kale
  • 2 -3 handfuls arugala
  • 1 inch chunk ginger
  • 3 cloves garlic
  • 1/2 lime
  • 1/2 lemon
  • Handful cilantro, basil and parsley
  • Salt and pepper to taste

Begin by chopping onion, carrots and celery. Then saute with coconut (or olive) oil on medium heat in your soup pot.

Once fragrant, add in chopped apple, pear and broccoli. Pour in just enough water to cover your fruit and veggies. Put on lid and bring to a simmer.
***If you were planning on adding rice or quinoa, I would suggest adding it in immediately after the water comes to a boil and then add more water and return to simmer.

Add ginger, garlic and any left over apple/pear scraps into a blender with water. Blend until all ingredients have been liquefied.

   

Add in your greens – kale and arugula! If necessary, pour in more water.

Squeeze in lemon, lime and toss in herbs – cilantro, basil and parsley.

Turn off heat and allow flavors to fuse together. Add salt and pepper if desired.

Serve and enjoy! I suggest a delicious cup of green tea to compliment the flavors of this yummy soup!

It’s got everything you could want from a soup! Sweetness from the pear, sour from the granny smith apple and citrus fruit, and a little spice from the ginger and garlic. The fresh herbs really tie it all together! And the best part about soup is that is it INCREDIBLY easy to make! This took me about 10 – 15 minutes to prep and 30 – 45 minutes to cook – this depends on if you want to simmer it longer for a stronger union of flavors.
